I also really appreciate that you actually made a vinaigrette with the proper proportions (3 parts oil to 1 part acidic liquid), because that's the only way dressing really comes together properly, and so often people make it with not nearly enough oil. <br /><br />Maybe I'll try it with super thinly sliced leeks, instead of the onions?
