I made this this morning. I had only one...YUMMY!!<br /><br />I made this this morning. I had only one cup of strawberries, so I added an additional cup of blueberries {which I love}. I'm a vegan, so I needed to adapt it a bit. It was wonderful!! <br />Here's what I changed:<br />1. vegetable oil instead of butter--this worked well, but I will probably substitute Earth Balance/vegan margarine next time<br />2. vegan sour cream--made it using this recipe: http://www.theveggietable.com/recipes/sourcream.html<br />3. vegans don't use eggs, but you can make flax "eggs" that substitute perfectly. i used: http://www.theppk.com/veganbaking.html<br /><br />I did have to bake mine 12 minutes longer, I think due to the oil and tofu sour cream. It was divine! The cinnamon is a perfect compliment to the strawberries!
