My understanding of GF flours is that they have different weights to volume and different properties that affect the overall outcome of the product. If I were going to try to substitute, I would look up KAF GF flour blend and see what flours is in that blend and try to match it. My experience with GF flours is that the flours you have on hand are generally the main flours for most blends. Good luck!Jenhttp://ourgoodfoodlife.comnoreply@blogger.comtag:blogger.com,1999:blog-4377720798850978122.post-33691477151378374532012-12-12T18:01:34.496-05:002012-12-12T18:01:34.496-05:00If i have other gluten free flours, but not a pre-...If i have other gluten free flours, but not a pre-mix like King Arthur, can i still make these? A tried and true recipe.Jenhttp://ourgoodfoodlife.comnoreply@blogger.comtag:blogger.com,1999:blog-4377720798850978122.post-72760716717472956842012-01-04T21:46:06.694-05:002012-01-04T21:46:06.694-05:00So glad you posted this, especially the frosting.
...So glad you posted this, especially the frosting.

I do have these vegan chocolate cupcakes that I make once in a while- the vegan friends say they taste good (But I have no idea what a vegan cupcake is 'supposed' to taste like, so I just take her word) but all I have for the frosting is a royal icing that, frankly, tastes a bit metallic. This looks SO much better,

I'll have to switch- it has a nice color and looks really stable.

Happy 2012!Jeffhttp://www.adorkandhispork.comnoreply@blogger.comtag:blogger.com,1999:blog-4377720798850978122.post-37183103815093419192012-01-03T20:53:25.341-05:002012-01-03T20:53:25.341-05:00as someone who consumed these cookies (LOTS of the...as someone who consumed these cookies (LOTS of them), i must say they were FABULOUS! thanks, jen!Amy Young, Lashionista and Entrepreneurhttps://www.blogger.com/profile/15429054955278480789noreply@blogger.comtag:blogger.com,1999:blog-4377720798850978122.post-64030586790627166362012-01-03T11:40:23.734-05:002012-01-03T11:40:23.734-05:00Very inspired by your baking adventures. I really want to see your 3-d logo!Jenhttp://ourgoodfoodlife.comnoreply@blogger.comtag:blogger.com,1999:blog-4377720798850978122.post-46542313714215514052011-12-28T19:12:30.443-05:002011-12-28T19:12:30.443-05:00Those cookies are gorgeous! Mine was one of the most fun and least stressful family Christmases in recent memory. I was overwhelmed by the generosity and thoughtfulness of the gifts I received (and one had me laughing out loud: a three-dimensional version of my blog logo). My sister and I cooked a ridiculous amount of food. My brother-in-law did his magic with wine pairings (even with Cincinnati chili :) And we all lingered over the dining table after many a meal. It doesn't get much better than that, does it? Unless you've got Tom Waits on the turntable . . .

Wishing you a fine new year!
xoxo, eggySharon Ruddhttps://www.blogger.com/profile/00598263732896925616noreply@blogger.com
